Nowadays, the task of increasing the production of high-quality natural food products is considered urgent. This task can be solved through the proportional development of all areas of agriculture, including beekeeping. Honey production in Russia does not meet the needs of customers. Beekeepers provide 150 tons per year with a total turnover of 300 thousand tons in Russia. The rest of the honey is purchased abroad. Thus, there is a great need for high-quality healthy honey. For many years, bee breeding has been practiced in Yakutia. In Soviet times, apiaries were used on collective farms, eventually gaining experience in keeping thermophilic insects in harsh Yakut winters. But, unfortunately, so far the production of Yakut honey has not acquired an industrial scale. So far, it remains at the level of enthusiastic beekeepers. The abundance of honey plants speaks in favor of Yakut beekeeping: black and red currants, blueberries, lingonberries, rosehip, raspberries, spirea, white sweet clover, etc. But the main base for honey bees is Ivan tea. The abundance of honey plants is supported by a healthy ecological environment in which they grow. This fact makes Yakut honey one of the most environmentally friendly in the world. Local beekeepers say that even though it is expensive to produce, it more than pays off the high cost with its quality. All products consisting of honey find their application in various areas of modern human life: a valuable food product, a wonderful medicine, cosmetics, etc. Honey is useful for people of all ages, especially children, the sick and the elderly. It contains a lot of vitamins. In total, honey contains more than 60 different enzymes and substances. Carbohydrates, fructose and glucose are an integral part of all honey varieties. The development of beekeeping in Yakutia has great opportunities to become one of the promising branches of agriculture and to provide the population with high-quality sanitary bee products. The development and resolution of these issues determines the relevance of the topic and the expediency of doing this work. The purpose of the study: veterinary and sanitary expertise of Yakut honey from a personal subsidiary farm and compare it with imported honey. Research objectives: 1. To study the theoretical material. 2. To investigate the organoleptic characteristics of imported and Yakut honey from a personal subsidiary farm. 3. To investigate the physico-chemical parameters of imported and Yakut honey of a personal subsidiary farm. 4. Based on the conducted research, to make comparisons and conclusions. The object of the study is Yakut honey from the personal subsidiary farm of Ksenofontov Vladislav Vladimirovich from Oktemtsy of the Khangalassky ulus. The practical value is the implementation of a complex of organoleptic, physico-chemical research methods for veterinary and sanitary assessment of Yakut honey from a personal subsidiary farm in comparison with imported honey.
